This is what I call Gazpacho. It's time to get rid of the herbs and veggies that have been running over your yard for the past few months. Go ahead and clean out your fridge while your at it and you'll impress your friends with a fancy sounding and gourmet looking dish. I'm not sure what the Spanish really call Gazpacho, but I sure like my creation. Here are the special ingredients in no specific order:
- Cucumbers diced
- Red Onion diced
- Any and all peppers welcome
- Tomatoes diced
- Yellow squash diced, even a small diced zucchini
- Leftover Salsa
- Cilantro chopped
- Tomato juice (the V8 kind is good, especially "hot and spicy")
- Salt and pepper and plenty of cumin
- Cooked baby shrimp for fanciness
- Olive oil
- And what ever else is left over on that counter top or fridge of yours
CHILL and EAT COLD. Great with tortilla chips and sliced avacado on top!
And best of all, it ends in - ACHO!!
